Today the Valencian paella is made up of so many diverse forms that any dish which has rice as one of the ingredients is called paella. The authentic Valencian paella contains vegetables and meat of either chicken or rabbit with the rice in its main course. But many places of Spain serve seafood or blood sausages and even exotic ingredients like olives and potatoes with the rice as real Valencian paella. Valencian paella with seafood is called ‘Paella de marisco’ or seafood paella. You can even order mixed paella, a combination of seafood and meat.
